Pizza!

One of my favorite meals to eat is pizza. I made my first one as a newlywed and haven't stopped since. Through the years the process has evolved slightly and I've learned what works for me and what doesn't. I've been passing on the making of this yummy dish to my kids and they can make their own from scratch. We like to make enough so there will be leftovers for lunch the following day. Here's what went into the ovens for dinner:

During our most recent orthodontist visit an interesting thing happened. While waiting on the girl to finish with Sam, my daughter, I noticed a young teenager suddenly stand up and go to where her father was standing on the opposite side of the room. She gestured to him and he quickly turned her around and proceeded to perform the Heimlich Maneuver on her. All of this happened so fast that no one in the office noticed because they were all facing the other direction working on patients. Thankfully, the obstruction in her airway was cleared and it all turned out well. I encourage everyone who reads this post who isn't trained in First aid and CPR to get trained. The life you save could be your own.

I was given the opportunity yesterday to visit what I consider the Mother of all Estate Sales. It was a business that is sadly closing up shop. While they had so many awesome things, I thought I'd share with you a few pictures.

Baking Bread

A few days ago we ran out of bread and as I didn't feel like getting in the car and driving to the store to buy some I had a ~~great~~, perhaps not so great, idea. I have everything I need. I'll just make some! Here is my account of the next several hours:

A little yeast, oil & warm water is always a good way to begin. Don't mind the egg. I laid it out because I saw it on the recipe list and then threw it in with everything that was supposed to be in the bread machine only to realize later that it wasn't actually part of the recipe. Oops! Oh well...moving on....

Here is what happens after 90 mins on the dough cycle:

After dividing the dough and kind of shaping each half into a loaf, I popped them into their own bread pan to rise.

Since it was cold, I placed the loaves to rise in a slightly warm oven with a bowl of hot water underneath. It makes the oven cozy and humid which makes yeast happy.

The next picture is not the awesomely risen loaves that I moved from the cozy oven into an oven that was preheated. It's the result of those once awesomely risen loaves having crashed to the bottom of the pan after being subjected to the cold house in transit. At least that's my story...

And since life, like baking bread, can be unpredictable despite our best intentions, here's what became of these loaves:

Grilled Mozzarella Cheese Sandwiches!

(Sure the loaves came out a little vertically challenged but with a little butter, garlic powder and Italian seasonings they were delish!)

Hmmm....I wonder what bread I should attempt making next?

Apple Pie

This past weekend, I got creative in the kitchen. In addition to making cakes and cupcakes (both real and fake), I also like to make pies. This time around, I decided to make an apple pie completely from scratch. The crust was just right and the filling itself had chunks and cubes of chopped apples in it. Simply put, it was delicious, however, I don't think words alone can describe how great it was. It's said that a picture is worth a thousand words, so take a look!

Baking Bread

In addition to experimenting with making different kinds of cakes and cupcakes recently, I've also decided to try making my own bread. There's just something about a loaf of homemade bread that makes it so much better than the store-bought bread. After trying a few different ideas, I chose to make the dough into round shapes instead of making it a loaf. These rolls are perfect for making sandwiches, hamburgers, or for just spreading some butter on them and eating them as they are!

Chocolate Fudge Cake

Here's the cake that perfumed the house a few days ago when it was in the oven. It turned out to be a seven-plus pound chocolate fudge cake. I covered it with a delicious vanilla frosting that was sweet and nicely complimented the chocolate.

Midnight Snack

This past week, I made a special salad to go with dinner one night. This salad is composed of spinach and chick peas mainly, with a light and tangy dressing of lemon juice, olive oil, cumin, salt, pepper, sugar, and garlic. If there are any leftovers after dinner, they are usually claimed for a perfect midnight snack that you don't have to feel guilty about eating at that time of the night. ;) The recipe is as follows:

1/4 cup of fresh lemon juice

1 to 3 tablespoons of olive oil (depending on your taste)

1/2 teaspoon of salt

1/2 teaspoon of sugar

1/2 teaspoon of ground cumin

1/4 teaspoon of coarsely ground black pepper

1 clove of crushed garlic (crushed with garlic press)

1 bunch (1 pound) of spinach

1 can (15 to 19 ounces) of garbanzo beans (rinsed and drained)

Citrus Fruits

Yesterday, while out on my weekly grocery trip, I came across some great looking lemons and limes in the produce area of the store. They smelled and looked so good that I couldn't resist buying them, so I'm planning to use them in a special salad and a very tasty rice recipe. Details to follow...

Real Cupcakes

This past week, I decided it was time to get creative in the kitchen. Working on so many non-edible cupcakes definitely makes you want to put together some completely edible ones! After a bit of experimenting, I came up with some cupcakes that were absolutely delicious and very fluffy. I also topped them with tasty chocolate frosting and added sprinkles for the finishing touch. They came out perfectly and I will be back in the kitchen this week to bake more edible desserts!

Memorial Day

With today being Memorial Day, millions of people across the country will be gathering with family and good friends to remember those who have died while serving in the American military and to honor those who have served in it and still live.

Throughout American history, thousands upon thousands of men and women have given their time and lives to defend the United States from any attack it came under. From the time of the American Revolutionary War, all the way up to the wars in the Middle East today, our military has protected this country through hard work, sacrifice, and loyal service.

Let us remember today that freedom is never free. It is always bought with blood.

Thank you to our military for all you do and for your time of service and sacrifice.

It's freezing in Texas! Well, I know it's freezing in much of the country. I'm just looking forward to thawing out and seeing the mercury rise a bit. Although I haven't been able to venture out for three days I am enjoying working in my cute cupcake pajamas. Remember these? I confess that I managed to change them before the FedEx driver showed up today. No need cracking her up, too, huh?

Kids and Birds

I am tremendously blessed to serve in children's ministry. Recently after discussing G-d's creation all of the kids got to build a handcrafted bird feeder. Using several pinecones that have been wired together as a base, the kids smeared vegetable shortening on them and then pressed popcorn and birdseed all over the pinecones. You can also use peanut butter instead of shortening if you prefer. (We used shortening due to some kids being allergic to peanuts.) The result was a rather interesting looking feeder that is sure to make some of our feathered friends quite happy! Here's a few that were made:

I've had lots of errands to run lately! It seems that no matter how many shopping lists I make or notes that I jot down, I always seem to miss things. Ugh. Here's my sidekick, aka. delivery dude, stock dude, and overall "reach this for me because I don't reach it" dude. We're getting a ~~small~~ turbo boost to keep the engines going courtesy of Mickey D's. I cannot begin to imagine how many calories I consumed. And I know that delivery dude is not in the least bit concerned about the ones he consumed. But it sure was fun! :)

Thanksgiving Day was very pleasant. It was a slow and very casual day filled with good food, family and love. Contentment was also here. You know, contentment is not always the easiest thing to have. Through life's trials, contentment is learned, I believe. And while we're not always a willing student, life gets better when we learn to be content. So while the holiday of Thanksgiving is a day where so many reflect on what they are thankful for, I believe we need to count those blessings each day and be content.

It's a beautiful and cold Thursday morning. The sun is shining, I think. It's hard to tell from my widow because of all the condensation covering it. I like how things outside look with condensation on windows along with cooler temperatures. After long and very hot summers, this type of weather is a welcome relief.

Our day is beginning quite nicely. We've started cooking lunch although thankfully there's not too much to do. The mesquite smoked turkey bre*st I picked up at Sam's Club is a yearly treat. I don't enjoy cooking a whole turkey, as no one eats the whole thing and there's only so many turkey leftovers anyone can stomach. So I opt for something I know we'll consume and not waste.

With my verbal instructions, Helper #1 has started the green bean casserole, while I sit here typing. You know, moms are supposed to do the really important things, like blogging. ;) Meanwhile, Helper #2 is pulling together ingredients for the corn casserole. Helper #3 is quite the diligent student and is taking advantage of the slow food preparations to get a little more work done. Yes, on a holiday. Did I mention she's quite studious? Helper #4 is on holiday at a friend's ranch and caught the largest bass on their fishing expedition yesterday. And finally, Helper #5 is also quite studious and is busily completing more school work. I think he's a genius. I guess I should get up from this computer and help expedite lunch. There's mashed potatoes to get going so I guess that job falls to me. It's going to be a good day.

Rose Garden Faux Cakes

Hello again! The summer has been great and yet miserably hot. Despite fulfilling all of my extra commitments by the end of June, things have not slowed. There's always something to do. And I'm o.k. with that. As the new school year begins, I'm looking forward to autumn. It's my favorite time of the year and most importantly temperatures will cool down. Yay!

Thinking about June

It seems like the year is flying by. Despite it being the middle of May I've been thinking about June. For so many of us it's a time for the kids to be out of school, summer plans to be made, romping around the yard barefooted, and weekend outdoor events. And for some it's a time for weddings. Weddings are wonderful, romantic and joyous. Therefore, I've "baked" a beautiful faux cake which I've topped with pink and cream roses and hydrangea. It's perfect for any romantic decor, wedding reception or tea party. I love the final result.

It's Friday

After a very busy week and having to take care of paperwork here and paperwork there it's nice to finally be at home in the afternoon. In the middle of all of my errands and paperwork I've been steadily processing orders. And now, on Friday afternoon its time for a simple and yummy treat. It's time to make challah. No, this is not one of my faux pastries. I start with one lump of dough and make two challahs. Take a peek:

Here, I've finished braiding it. My braids are not anywhere near perfect but no one ever complains. It's now covered and rising. Baking takes place in about 2 1/2 hours from now.

Wonderful Spring!

My favorite seasons are spring and autumn. After a few days of record snow here in north Texas last month, I'm enjoying the signs of renewal in nature. Scarrrrrry day at the office

One of the many advantages of working from home is that I can run around all day in my pj's. And since there is a tendency, especially during cold weather, for me to stay in them as long as humanly possible sometimes interesting things happen. For instance, this morning while taking out the trash at 7 a.m., I was busted in my pink cupcake pj's by my neighbor who rides a Harley. I'm sure he got a good laugh. Hey, we can all use a good laugh that early in the morning! :)

Coconut Faux Cupcakes

Today was a federal holiday for federal employees. However, the company my mother works for decided to do an employee training day today. They offered to the employees that they could drive themselves to the training center or ride on their chartered bus and not worry about the commute. My mother decided to ride the chartered bus with her friends. The day went along quite normally until the ride home. As they were crusing down the highway a car about four cars in front of them slammed on their brakes, which caused a chain reaction of cars slamming on their brakes. Well, imagine a huge, tall charter bus attempting to not hit the cars in front of it! The bus driver swerved trying to avoid the braking cars and in turn went off the side of the road which sloped down into a ditch. Pretty soon the smell of burning rubber was perceived and women were screaming for the driver to turn the bus, but she couldn't. Mom said that while they were screaming she was praying. The bus driver managed to stop the bus and while it stood at a sharp angle along the inside of the ditch, mom & friends exited the bus. She said that her first thought was, "I'm not riding the bus next year." Despite the precarious placement of the stopping point of the bus, they discovered that if the driver had not been able to stop it where she did, the bus would have flipped, given the shape & angle of the ditch they were in. I'm SO thankful to G-d that he kept my mom and everyone safe! He is faithful to keep His promises!!

Dallas Market Wrap Up

The January market has come and gone. It was such a great experience for all of us and we met so many neat people. Despite being at market for all four days, we only took a few pictures. Time flies when you're having fun! Here's a few pictures of our booth, Vintage Rose Boutiques, and I believe it shows all the hard work we put into making this market a success.

As you entered the left of the booth first up was So Shabby Pink. I love her jars with handmade roses. I personally know that much time and attention goes into each of her creations. I know this because I've known Peggy for at least 16 years and was there when So Shabby Pink began. I think you'll agree that Peggy's creations are delightful.

As you continued on the left side, you made your way to Carrie's, Noelle Garrett Designs, display.

Carrie's garlands hung from a set of shutters and a display board with tags was next to it. Her art is a true scrabook/vintage lover's dream. Carrie's mom is her business partner and it would have been the icing on the cake if she had been there, too!

As you continued to the right, next was Lori of Katie's Rose Cottage Designs.

Lori is a California girl who now lives in Texas. Her display was gorgeous. Have you seen her new line of vintage inspired jewelry? It is so beautiful! It's a breath of yesteryear. You have to check out her new website.

Next up were my faux pastry creations of My Pink Boutique!
I truely enjoy what I do and am passionate about pastries. While the spring line is here, I have more designs in my head and some already started in my "bakery". So don't be a stranger because more great pastries keep coming!

To finish our tour here is Meadow Street. Erica is a California girl, like Carrie and Lori. Erica's handmade roses and vintage inspired jewelry are so feminine and elegant. Seriously, you can't own just one of Erica's roses. More is always better in this case.

Market was a wonderful experience! And I'm looking forward to being there again. I'm so glad that Erica and Carrie flew out to Dallas to be with us. It was a joy to meet them in person, and Lori, too! The ladies of Vintage Rose Boutiques are the cream de la cream.

The ladies of Vintage Rose Boutiques were very busy today setting up our booth. The excitement of Market is building and we know it's going to be a good one. Here's a few pictures.

I'm so excited about being there with my faux pastries and with such an amazing group of very talented ladies. It's Freezing Outside!

This day has been SO cold. The wind was blowing and snow fell the entire day. I know some of you are buried under the white stuff right now, but we don't always get it in my neck of the woods so it's been a bit of a treat for some. I ~~love~~ reeeeeeally like it. Just in case you haven't seen enough snow, here's a picture that took outside my home.

I hope you all stay warm and have a lovely weekend. It's supposed to warm up a bit here on Friday and through the weekend. Therefore, I'm glad I took this picture because it will surely last longer than the snow will.

Morning Surprise

I awoke this morning to a sky full of snow falling! It was so calm and peaceful as the delicate flakes began covering everything in a blanket of white. While our temperature has remained above freezing we just had a dusting of the white stuff but it was fun to see it nonetheless. I suppose this means winter is at our doorstep. Brrrrr!!!

Candy Corn Faux Cupcake

As the daily temperatures are starting to not be so harsh, I see that fall is approaching. I remember being a child and visiting my grandparent's home. It was warm and inviting and filled with lots of wonderful collections of things. One memory in particular was that my grandmother had beautiful, crystal candy dishes of varying sizes and shapes. Some were open and others were crowned with glimmering, heavy lids that sparkled under the lights. My quest for the dish full of candy corn, my favorite autumn candy, was never disappointing. I went to a dear friend's house last week to visit and had a wonderful time. She's such a neat lady and is married to great man, who truely loves his wife and kids. Their children are adorable, too! While there we had a very tasty lunch and very peanutty peanut butter cookies. I liked them so much that since that day, I've had an itch to make some of my own. Apothecary jars can be so much fun to fill. Their sizes and shapes are classic. I've seen them filled with everything from M&M's to apples to cotton balls to sea shells and more. Friday nights are very special around here. I always cook favorite recipes and homebaked bread. Here's some of what I cooked last night. The chicken is so wonderful! It's a recipe found on the web somewhere but I can't recall where. Check it out:

Here's the recipe if you'd like to give it a go:

Garlic Chicken with Lemon Fresh Herbs

3 cloves of garlic, chopped and smashed into a paste
1 bunch of parsley, chopped
1 tsp. Thyme
3 lemons, juiced
8 oz. dry Sherry
EVOO (extra virgin olive oil)
salt and pepper

Cut chicken into 10 serving size pieces. (I use 12-5oz. chicken bre*sts) Season these with salt and pepper. Brown chicken in 2 Tblsp. or a little more of EVOO in large heavy skillet over medium high heat. Turn heat down and cook covered for 15 mins. Remove chicken pieces to a serving dish and keep covered to keep warm. Retaining the juices, add garlic to pan and cook gently for about 10 mins., being careful not to burn the garlic. Add Sherry and thyme and turn heat up to let sauce reduce to about 1/2 while stirring. Add lemon juice and about 3/4 of the chopped parsley and reduce again. Pour sauce over chicken and add the last of the parsley before plating food. Enjoy! :)

Traveling Buddies

Each week as I make my grocery run I'm accompanied by two special traveling buddies. Aren't they cute? ;) Living in Texas means very hot summers. And before the actual first day of summer arrives, we're already enduring sweltering temperatures. This is not good for groceries that are left in the car between stops. A friend of mine wisely suggested I start taking along a cooler w/ ice to store items that need to remain cool. It has made such a difference that I bought a second larger cooler, too! :)

Cinnamon Almonds

Oven roasted cinnamon almonds. Yum! My DH loves these and when I saw the price of a very small package of them at the market I decided that I can make them myself. Thanks to the power of the internet, I'm now armed with a recipe. That's a bowl of melted butter, almonds and another bowl with cinnamon, brown sugar, white sugar and ground cloves. The smell is wonderful and the taste was just as yummy. They didn't last long around here. ;)

Now throw all of the ingredients together making sure each almond has a chance to get some of the sweet goo on it. Pour the entire bowl out on to parchment paper and bake.

Mmmmm..... here's what I made for dinner last Friday night. I'm really enjoying Mediterranean food. Pictured is tabouli, curried Meditarranean rice (I forgot the raisins.... I'll be sure to get them in there next time though), curry chicken, tahini, tzatziki, falafel, Israeli salad and bread. Oh my! This was a fantastic plate of flavors, colors and textures! :)

Wow!

I have finally found a plant that I can't kill. It's mint! This one lives in the kitchen window. I've always liked having live plants indoors... minus the gnats. However, I tend to overwater them and they miss out on the full sunshine outdoors which means they always wind up in the trash.

In my endeavour to try more Mediterranean recipes, I've been going through a lot of mint. So I decided that it would be more economical to buy a plant, grow it and harvest as needed. My BF, Jen, pointed out that now I need parsley. Hmmm.... I wonder if it'll do as well next to the mint?

Spring is my other favorite season. And while we're still dipping down into colder temps, I sure am enjoying days that are mildly warm. It's a bit early for trees to begin blossoming, however, I can see that it's coming. Here's a picture of some of my pretty faux cupcakes that are perfect for spring decorating. Oh my! It's cold outside! While I'm not in the north of the country, it's plenty cold where I'm at. It's just the kind of day to curl up under an electric blanket and read or watch movies. When it's this cold I don't even want to move. Moving stirs up the cold air around me, thus making me colder! Aak! Despite the cold I had to run up to FedEx today. And since my favorite coffee house is on the way to FedEx, it was time for a yummy latte. Funny how when it's this cold, coffee just isn't blazing hot. Celebrating 18 Years

Where has the time gone? Eighteen years ago today my DH and I were married. Our journey together has been full of good times and some not so great times, but through it all we are devoted to each other and still in love. G-d has been good to us and we are thankful.

I love Mediterranean food. It's so full of flavor and not at all heavy or dripping in grease. It's just perfect. The colors and textures are great, too. I could easily eat this way several times a week. I neeeeeeed to learn to cook this food. Can anyone recommend a good Mediterranean cookbook that won't intimidate this faux pastry gal?

Happy New Year!

As I reflect on both personal and public events of 2008, I'm glad that with the new year comes a time to reflect and evaluate. It's a good time to organize and gear up for a bright new year. I'll spend the next few weeks doing just that. I have some wonderful new projects planned with some already under development. Fudgie Wudgie!

Everytime I say the company name of this fudge I think of the children's rhyme about Fuzzy Wuzzy. It's such a cute name and the fudge is so delish that I have to make myself put the box away after a few bites. I'm serious. This fudge is dangerous! It's so tempting to sit down with the pretty red and gold box with spoon in hand and devour it all in just one sitting. I found it at my local Sam's Club. The poor lady giving samples was beginning to look worn out as the troops and I asked repeatedly for more samples. However, when she saw just how many of these pretty boxes wound up in my cart she must have thought I was nuts! I have never spent this much on fudge before. Yet I managed to reason it out that they were holiday gifts. Yeah...that's the ticket! They're holiday gifts. My personal favorite is the Belgian Chocolate Walnut Fudge. Oh MY!!

Today was a just one of those days where I return home late. I mean laaaaaaaaate. Realizing my predicament of not having eaten all afternoon and night, I called home to ask the capable and ~~attentive~~ helpful men in my life to please put two chicken planks in the oven for me. In that way they'd be ready to eat by the time I arrived home. Weren't my guys sweet???????

Below is what happens when two men put two chicken planks in the convection oven at 400 and then sit down in front of their computers:

Funny how 45 mins. later there's a strange smell of burned food coming from the oven. Hmmm....I wonder why the oven is still on? These poor little chickies saw the garbage can and I had to start two more. This time..... the timer was set and we laughed at my sad dinner. :)

Whoa! We were driving to the store for groceries the other day and this is what I saw. My first thought was that the guy was dead but then I saw the upside down broom in hand. Cinnamon rolls make the house smell delightful and always call people from the farthest reaches of the home asking, "What are you baking?!" I recently made these from scratch and they were well worth the effort. Ahhhh..... I need an afternoon pick me up. As there is no chocolate in the house, I'm settling for a nice cup of coffee. I'm really enjoying this Vanilla Biscotti flavored coffee from Folger's. The other day while I was at Sam's Club I noticed that they carry Dunkin Doughnuts coffee. That may have to be my next coffee acquisition. And I love the caramel lattes from Starbucks, but I reserve them for extra special occasions. What coffee do you drink when you need a pick me up?

One of Life's Simple Pleasures

It's fun sometimes to receive big girl toys like a new car or jewelry. However, it's the small things in life that bring the most contentment. After I was married, my mother gave me a refrigerator magnet that read, "Happiness is wanting what you have." There are times when we take our eyes off what is really important that we can be come discontent. Yet if we'll keep our eyes on what is important we find true happiness. It's during those moments of relection whether in quiet solitude or even just stopped at a stop light that I am reminded about what's really important in my life and family. And while I'm contemplating I enjoy the view around me.

I love this picture. I love the fluffy, white clouds. I love how the birds are all lined up side by side on the wires. About 99% of them are all facing the same direction. They're so cute when they do this. This is one of the simple pleasures that I enjoy.... a beautiful blue sky with fluffy clouds and cute birds. :)
