Pie Cupcakes!

Mom came for a visit and we had so much fun. She was on a serious baking kick and decided to make some coconut cream pie cupcakes. Or maybe they should be called cup-pies or piecups? Regardless, they are amazingly delish that no one can eat just one! I'm a serious coconut cream fan and these are the perfect size for individual portions. Ok...so I didn't eat just one...I'm not saying how many I ate....you can't make me tell.... ;D Take a peek:

Baking the cups. I'm a picky pie crust eater. Unless the crust is reeeeally good. I won't eat pie crust. This one was fantastic!
